Elf 4 Health Challenge: Day 1 (Monday, November 26th)
I know I know… Not healthy! But after being sick for two days (either from a 24-hour bug or my self-diagnosed eating binge disaster) I was proud of making it through day 1 of the #Elf4Health challenge: Meatless Monday.
Considering I took a sick day on Monday and therefore had easy access to my overly stuffed refrigerator, and by overly stuffed I mean by leftovers that mostly contain meat (really was regretting putting bacon in my spinach rolls and tuna in my mac salad at that time), I had to yell at myself all day to stick to the inari sushi (sushi rice wrapped in sweet seasoned fried tofu) and ume boshi (rice balls filled with pickled Japanese plums) leftovers until Ryan came home with my pizza dinner and rice pudding dessert… YUM!
Don’t judge! I needed comfort food. I hate when I have a fever! Excuse 1,002,567.
